Banana Nut Bread
Ingredients:
- 1/2 cup butter
- 1 cup sugar
- 2 eggs
- pinch of salt
- 1 teaspoon baking soda
- 2 cups flour
- 3 large overripe bananas, mashed
- 1/2 cup chopped pecans
Method:
Pre-heat oven to 325°.
Cream together butter and sugar. Add eggs, beating after each egg. Sift dry ingredients together. Add dry ingredients to creamed mixture. Fold in banana and chopped pecans.
Pour batter into well greased loaf pan. Bake for 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean.
Let cool (if you can resist).
