Shrimp & Grits
Ingredients:
- 1 lb shrimp, thawed, peeled, etc.
- 2 rashers bacon
- 1 onion, diced
- 1 bell pepper, diced
- 1 teaspoon garlic, diced
- 1 tablespoon lemon juice
- Cajun spices, to taste
- 1/2 cup quick grits
- 2 cups whole milk
- large pinch of salt
- grated cheese
Method:
Shrimp:
Cut bacon into small pieces (kitchen shears work really well for this) in a large saute pan. Cook the bacon, rendering fat. Once cooked, remove bacon from the pan and set aside.
Add the onion, bell pepper, and garlic to the saute pan. Saute over medium heat until onions turn translucent. Add shrimp, lemon juice, and spices. Cook until the shrimp is pink.
Grits:
Start with Basic Grits, using half & half as desired for extra creamy grits. Once cooked, add desired type of grated cheese (cheddar works pretty well). Stir until melted.
Plating:
Ladle grits onto plate. Top with shrimp mixture, and sprinkle on bacon bits. Serve immediately.
