Simple Ratatouille

Method:

Cube, salt, and drain eggplant in collander for 1/2 - 1 hour if seedy

Cook eggplant in medium skillet in olive oil for about 20 minutes. Do not undercook.

Add chopped zucchini to skillet and cook for 2-3 minutes.

Add diced onion to skillet and cook until translucent (2-3 minutes).

Add thyme and garlic, and cook for about a minute

Finally, add diced tomato, stir and cook a final 2-3 minutes

Serve hot topped with a bit of parsley
